Description
At its core, Three Ingredient Cloud Bread is a grain-free, high-protein bread substitute. It is essentially a savory or neutral meringue that incorporates fat and protein to give it a more substantial structure than a standard marshmallow-like whip. Because it contains no flour, it is naturally free of gluten and very low in carbohydrates, making it a favorite for those who prioritize protein-rich snacks.
Ingredients
-
3 large eggs, separated
-
3 tbsp cream cheese, softened
-
¼ tsp cream of tartar (or a pinch of salt)
Instructions
-
Preheat oven to 300°F (150°C). Line a baking sheet with parchment.
-
Beat egg whites + cream of tartar until stiff peaks form.
-
In a separate bowl, mix egg yolks with cream cheese until smooth.
-
Gently fold yolk mixture into egg whites (don’t deflate).
-
Spoon into 6–8 cloud mounds.
-
Bake 25–30 minutes until lightly golden.
-
Cool slightly before removing.
Notes
This bread is all about the fluff—be gentle when folding and don’t rush the bake. It’s best enjoyed fresh, but leftovers toast up nicely for a light, airy snack or sandwich base.
