Description

At its core, this recipe is a sophisticated, chef-inspired spin on classic oven-baked French fries. Rather than settling for simple fast-food style fries, Truffle Parmesan Fries with Garlic Aioli combine carefully soaked and dried russet potato batons with high-grade extra virgin olive oil, fragrant spices, and a final toss of luxurious finishing ingredients.

Ingredients

Scale

For the truffle Parmesan fries

  • 4 medium russet potatoes (about 800 g)

  • 2 tablespoons olive oil

  • 1–2 teaspoons truffle oil, to taste

  • ½ cup freshly grated Parmesan cheese

  • 2 cloves garlic, minced

  • 1 tablespoon chopped fresh parsley

  • ½ teaspoon salt, or to taste

  • ¼ teaspoon freshly ground black pepper

  • ½ teaspoon paprika (optional)

For the garlic aioli

  • ½ cup mayonnaise

  • 2 cloves garlic, finely minced or grated

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon Dijon mustard (optional)

  • 1 teaspoon olive oil

  • Salt and black pepper, to taste

Instructions

Step 1: Prepare the potatoes

Wash and peel the potatoes if desired. Cut them into evenly sized fries, approximately ¼ inch thick. Soak them in cold water for 20–30 minutes to remove excess starch.

Drain and thoroughly pat the fries dry with a clean kitchen towel.

Step 2: Season the fries

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Toss the dried fries with olive oil, salt, black pepper, and paprika. Spread them in a single layer, ensuring they do not overlap.

Step 3: Bake until crispy

Bake for 25–30 minutes, flipping halfway through, until the fries are golden brown and crisp. Cooking time may vary depending on their thickness and your oven.

Step 4: Prepare the garlic aioli

In a small bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, olive oil, salt, and black pepper. Stir until smooth.

Refrigerate for 10–15 minutes to allow the garlic flavor to develop.

Step 5: Add truffle and Parmesan

Transfer the hot fries to a large bowl. Drizzle with truffle oil and toss gently.

Add the grated Parmesan, minced garlic, and chopped parsley. Toss until the cheese coats the fries evenly. Taste and adjust the seasoning as needed.

Step 6: Serve

Arrange the fries on a serving platter. Finish with extra Parmesan and parsley, if desired. Serve immediately with the chilled garlic aioli on the side.

Notes

Pair these gourmet fries with veggie burgers, grilled chicken, sandwiches, or your favorite party appetizers for a delicious restaurant-style meal at home.
