If you have ever found traditional meatloaf to be a bit heavy or perhaps a bit too time-consuming for a Tuesday night, this recipe is your answer. Essentially, it takes the classic American comfort food and reimagines it in a handheld, individual format. The base consists of lean ground turkey seasoned with a blend of aromatic herbs and spices, then bound together with milk-soaked breadcrumbs to ensure a tender texture.
Ingredients
Meatloaf Muffins
1½ lb (680 g) ground turkey (93% lean works best)
¾ cup breadcrumbs or panko
½ cup milk
1 large egg
½ cup onion, finely diced
1 tbsp garlic, minced
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
BBQ Glaze
½ cup BBQ sauce
2 tbsp ketchup
1 tbsp brown sugar
1 tsp mustard (optional)
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
In a small bowl, mix breadcrumbs and milk. Let soak 2 minutes.
In a large bowl, combine turkey, soaked breadcrumbs, egg, onion, garlic, Worcestershire, and seasonings. Mix gently—do not overwork.
Divide mixture evenly among muffin cups, filling each about ¾ full.
Stir together BBQ glaze ingredients and spoon generously over each muffin.
Bake 20–25 minutes, until internal temperature reaches 165°F (74°C).
Rest 5 minutes before serving.
