Description
To fully appreciate this dish, it helps to understand what makes it so uniquely delightful. At its core, this traditional breakfast item relies heavily on a beautifully simmered, spiced vegetable sauce. Unlike a firm omelet or a hard scramble, the eggs are gently folded into the hot vegetable base at the very last moment, creating a silky, custardy texture that remains incredibly moist.
