Description

  • ¾ cup ube halaya
  • ½ cup shredded unsweetened coconut
  • 2 tablespoons coconut milk
  • 1 tablespoon sugar, optional

For the topping

  • 2 tablespoons melted butter
  • 2 tablespoons shredded coconut
  • 1 tablespoon ube halaya, optional

Instructions

  • Make the dough: In a large bowl, combine flour, yeast, sugar, and salt. Add warm coconut milk, egg, melted butter, and vanilla. Mix until a soft dough forms.
  • Knead: Knead for about 8–10 minutes until smooth and elastic.
  • First rise: Place the dough in a lightly greased bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.
  • Prepare the filling: Mix ube halaya, shredded coconut, coconut milk, and sugar until creamy.
  • Shape: Divide the dough into 10–12 equal pieces. Flatten each piece, add a spoonful of ube-coconut filling, seal the edges, and shape into a ball.
  • Second rise: Arrange the rolls in a greased baking dish, cover, and let rise for 30–40 minutes.
  • Bake: Preheat the oven to 350°F (175°C). Bake for 18–22 minutes, until lightly golden.
  • Finish: Brush the warm rolls with melted butter and sprinkle with shredded coconut. Add a small drizzle or swirl of ube halaya if desired.
  • Serve: Allow to cool slightly and enjoy warm.
