Description

For the Ham

  • 1 fully cooked bone-in spiral-sliced ham, about 7–8 lb (3.23.6 kg)
  • ½ cup (120 ml) pure maple syrup
  • ½ cup (100 g) packed brown sugar
  • ¼ cup (60 g) Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • ½ cup (120 ml) apple cider or water

Instructions

  • Preheat the oven:
    Preheat your oven to 325°F (165°C). Place the ham cut-side down in a large roasting pan. Pour the apple cider or water into the bottom of the pan.
  • Prepare the glaze:
    In a small saucepan, combine the maple syrup, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, cloves, black pepper, and salt. Bring to a gentle simmer over medium heat and cook for 3–5 minutes, stirring until the sugar dissolves and the glaze slightly thickens.
  • Bake the ham:
    Cover the ham loosely with aluminum foil and bake for approximately 12–15 minutes per pound, or until heated through.
  • Add the maple glaze:
    During the final 30 minutes of baking, remove the foil and generously brush the ham with the maple glaze. Continue baking uncovered, brushing with additional glaze every 10 minutes.
  • Caramelize the exterior:
    For a deeper, glossy finish, increase the oven temperature to 400°F (200°C) during the final 5–10 minutes. Watch carefully so the maple glaze doesn’t burn.
  • Rest:
    Remove the ham from the oven and let it rest for 15–20 minutes before serving. This allows the juices to settle.
  • Serve:
    Serve warm with the remaining maple glaze from the pan drizzled over the slices.

Notes

For the best Vermont-style flavor, use 100% pure maple syrup rather than pancake syrup. The glaze is also delicious with a small splash of bourbon or orange juice for extra depth.
