Viral Cookie Dough Croissant (Le Crookie)

Description

To put it quite simply, this dessert is a brilliant crossover between a premium French viennoiserie and an American comfort food classic. When you take a closer look at the structure, you realize it is an ingenious method of upgrading a pastry that might otherwise be slightly past its absolute prime. The foundation of the dish relies on a fully baked, high-quality crescent-shaped pastry that is split wide open down the middle. Instead of filling it with traditional almond cream or chocolate ganache, the interior is loaded with a generous amount of standard chocolate chip cookie dough.

Ingredients

Scale

For the Cookie Dough

  • ½ cup (115 g) unsalted butter, softened
  • ½ cup (100 g) light brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1¼ cups (155 g) all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup (130 g) chocolate chips

For the Croissants

  • 6 large butter croissants
  • Extra chocolate chips for topping (optional)

Instructions

1. Prepare the Cookie Dough

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and creamy.
  3. Mix in the egg and vanilla extract until combined.
  4. Add the flour, baking soda, and salt. Stir until a soft dough forms.
  5. Fold in the chocolate chips.

2. Fill the Croissants

  1. Slice each croissant horizontally, leaving one edge attached if desired.
  2. Spoon 2–3 tablespoons of cookie dough inside each croissant and spread evenly.
  3. Close the croissants and spread another layer of cookie dough over the tops.
  4. Sprinkle with extra chocolate chips if desired.

3. Bake

  1. Place the filled croissants on a parchment-lined baking sheet.
  2. Bake for 10–14 minutes, or until the cookie dough is golden and set around the edges.
  3. Allow to cool for 5 minutes before serving.

Notes

Perfect for brunch, dessert, or an afternoon treat, this Crookie combines the best of both worlds in every bite. Serve warm for the ultimate indulgent experience.
