Description
For anyone unfamiliar with this specific baking trend, it helps to understand what sets this treat completely apart from a standard tray of cookies. Instead of scooping out individual balls of dough onto a flat sheet, the entire batch of rich dough is pressed firmly into a single deep baking vessel, such as a traditional pie plate or a springform pan.
Ingredients
Scale
- 1 cup (225 g) unsalted butter, softened
- 1 cup (200 g) light brown sugar, packed
- ½ cup (100 g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2½ cups (315 g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1½ cups (255 g) semi-sweet chocolate chips
- ½ cup (90 g) dark chocolate chunks
- ½ cup (100 g) milk chocolate chips (optional)
- 2 tablespoons flaky sea salt, for topping (optional)
Optional Add-Ins
- ½ cup chopped walnuts or pecans
- ½ cup caramel bits
- 2 tablespoons mini marshmallows
- Chocolate hazelnut spread for a stuffed center
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch (23 cm) pie dish or springform pan and line the bottom with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Stir in the chocolate chips and chocolate chunks.
- Press the cookie dough evenly into the prepared pan. Sprinkle extra chocolate chips on top for a bakery-style finish.
- Bake for 30–35 minutes, or until the edges are golden and the top is beautifully cracked while the center remains slightly soft.
- Let the cookie pie cool in the pan for at least 20 minutes before slicing. Sprinkle with flaky sea salt if desired.
- Serve warm on its own or with vanilla ice cream.
