At its heart, the Wagyu Blend Smash Burger Tacos recipe is a brilliant technical modification of the classic American smash burger. Traditionally, a burger is a thick patty served on a bun. However, the smash technique involves taking a loosely packed ball of ground beef and pressing it with significant force onto a screaming hot cooking surface. This creates a thin, uneven patty with jagged edges that become incredibly crispy and caramelized.
Ingredients
- 400g Wagyu ground beef (or Wagyu blend)
- 8 small flour tortillas
- 1 cup shredded cheddar cheese
- 1 small onion (finely diced)
- 1 cup shredded lettuce
- 1 tomato (diced)
- 8–10 pickle slices
For the Sauce:
- ½ cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp mustard
- 1 tsp pickle juice
- ½ tsp paprika
- ½ tsp garlic powder
Instructions
1. Make the sauce
In a bowl, mix mayonnaise, ketchup, mustard, pickle juice, paprika, and garlic powder. Set aside.
2. Prep the beef
Divide the Wagyu beef into 8 small balls (about 50g each).
3. Smash onto tortillas
Place each beef ball onto a tortilla and press it down firmly to spread thin across the surface.
4. Cook the tacos
Heat a skillet or griddle over medium-high heat.
Place tortillas meat-side down and cook for 2–3 minutes until the beef develops a crispy crust.
5. Flip & add cheese
Flip the tortilla, add cheese on top of the beef, and cook another 1–2 minutes until melted.
