Instructions
- Prepare the dates:
Place the chopped dates in a bowl and pour over the hot water. Stir in the baking soda and let the mixture sit for about 10 minutes, until the dates soften. Mash lightly with a fork. - Make the butterscotch filling:
Melt the butter and brown sugar together in a small saucepan over medium-low heat. Stir in the heavy cream and salt. Simmer gently for 2–3 minutes, stirring until smooth. Remove from the heat and stir in the vanilla. Let the sauce cool slightly. - Prepare the batter:
In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla. - Add the dry ingredients:
