- 1½ cups whole-milk ricotta
- 1 tbsp extra-virgin olive oil, plus more for brushing

- ½ tsp lemon zest

- Freshly ground black pepper
- 5–6 fresh figs, thinly sliced
- 2 tbsp chopped walnuts or pistachios
- Fresh thyme leaves, for garnish
- Optional: 1–2 tbsp balsamic glaze
Instructions
- Toast the bread:
Preheat the oven to 400°F (200°C). Arrange baguette slices on a baking sheet and lightly brush both sides with olive oil. Toast for 7–10 minutes, turning once, until crisp and golden. - Whip the ricotta:
Add ricotta, 1 tbsp olive oil, honey, lemon zest, a pinch of salt, and a little black pepper to a food processor. Blend for 1–2 minutes until smooth, light, and creamy. - Assemble:
Spread a generous spoonful of whipped ricotta onto each toasted baguette slice. Top with a slice or two of fresh fig. - Finish:
Drizzle with honey and, if using, a little balsamic glaze. Sprinkle with chopped nuts and fresh thyme. - Serve:
Serve immediately while the crostini are crisp.
