Description
White Chocolate & Blueberry Crumble Bars are a delicious dessert that combines the best of both worlds: a crunchy, buttery crumble and a juicy, fruity filling. The base and topping are made from a buttery crumble dough, while the middle layer is filled with sweet blueberries and rich white chocolate, creating a balanced, indulgent treat. These bars are easy to make and offer a burst of flavor in every bite. The blueberries add a refreshing tartness that contrasts perfectly with the sweetness of the white chocolate, making these bars a hit for anyone with a sweet tooth.
Ingredients
For the Crust & Crumble:
-
1 cup (2 sticks / 226 g) unsalted butter, melted
-
¾ cup (150 g) granulated sugar
-
½ cup (100 g) light brown sugar, packed
-
1 tsp vanilla extract
-
½ tsp almond extract (optional, but amazing with blueberries)
-
2½ cups (315 g) all-purpose flour
-
¼ tsp baking powder
-
½ tsp salt
For the Blueberry Layer:
-
2½ cups (300 g) fresh or frozen blueberries
-
1 tbsp lemon juice
-
2 tsp lemon zest
-
2 tbsp cornstarch
-
¼ cup (50 g) granulated sugar
Add-ins:
-
¾ cup (125 g) chopped white chocolate or white chocolate chips
Instructions
1. Preheat & Prep
-
Preheat oven to 350°F (175°C).
-
Line a 9×9-inch (23×23 cm) baking pan with parchment paper, leaving an overhang for easy removal.
2. Make the Crust/Crumble
-
In a large bowl, whisk together melted butter, both sugars, vanilla, and almond extract until smooth.
-
Stir in flour, baking powder, and salt until combined — the mixture should be crumbly but hold when pressed together.
-
Set aside about 1 heaping cup of the mixture for the topping.
-
Press the remaining dough evenly into the bottom of the prepared pan to form the crust.
3. Make the Blueberry Filling
-
In a medium bowl, toss blueberries, lemon juice, zest, cornstarch, and sugar until evenly coated.
-
Gently fold in white chocolate pieces.
4. Assemble
-
Spread the blueberry mixture evenly over the crust.
-
Crumble the reserved dough evenly over the top (some larger chunks, some smaller for texture).
5. Bake
-
Bake for 35–40 minutes, until the top is golden and the filling is bubbling around the edges.
-
Let cool completely in the pan (at least 1 hour) before cutting — this helps the bars set cleanly.
6. Serve & Store
-
Dust lightly with powdered sugar if desired.
-
Store airtight at room temperature for 2 days or refrigerate up to 5.
-
These also freeze beautifully for up to 2 months.
Notes
For an extra touch, drizzle the bars with a simple vanilla glaze or a dusting of powdered sugar once cooled. They’re perfect served with a cup of tea or coffee for a light, fruity treat!
