Description

At its core, this festive mocktail is a blended non-alcoholic beverage designed to resemble a snowy winter landscape. It combines a base of rich unsweetened coconut milk with cream of coconut for deep sweetness and silky mouthfeel. Bright white cranberry juice and golden pineapple juice add fruity complexity, while a splash of fresh lime juice balances out the sweetness with crisp acidity.

Ingredients

Scale
  • 1 cup (240 ml) coconut milk, chilled

  • ½ cup (120 ml) pineapple juice, chilled

  • ½ cup (120 ml) white cranberry juice

  • 2 tbsp cream of coconut, for extra creaminess and sweetness

  • 1 tbsp fresh lime juice

  • ½ cup ice cubes

For the festive garnish

  • 2 tbsp shredded coconut

  • 1 tbsp honey or simple syrup, for the glass rims

  • 2 small fresh rosemary sprigs

  • 2–4 fresh cranberries, optional

  • Lime wedges, optional

Instructions

1. Prepare the glasses. Spread the shredded coconut on a small plate. Lightly coat the rims of two glasses with honey or simple syrup, then dip them into the coconut to create a snowy effect.
2. Mix the mocktail. In a cocktail shaker or blender, combine the chilled coconut milk, pineapple juice, white cranberry juice, cream of coconut, lime juice, and ice.
3. Shake or blend. Shake vigorously for 15–20 seconds until chilled and well combined. Alternatively, blend briefly for a smooth, frothy texture.
4. Pour. Divide the mocktail between the prepared glasses. If you prefer a lighter drink, add a small splash of chilled sparkling water.
5. Garnish. Add a rosemary sprig and a few cranberries to each glass for a festive Christmas look.
6. Serve immediately. Enjoy while cold and creamy.

Notes

Serve in chilled coupe glasses, martini glasses, or clear tumblers with coconut-rimmed edges. Pair with Christmas cookies, cheese platters, savory puff pastry bites, or festive desserts.
