For the topping

Instructions

  • Prepare the oven: Preheat the oven to 175°C / 350°F. Line an 8-inch (20 cm) square baking pan with parchment paper.
  • Mix the butter and sugars: In a large bowl, whisk the melted butter, brown sugar, and granulated sugar until smooth.
  • Add the wet ingredients: Whisk in the egg, egg yolk, vanilla, white miso, yuzu juice, and yuzu zest until well combined.
  • Add the dry ingredients: Sift in the flour and baking powder, then add the salt. Fold gently until just combined. Don’t overmix.
  • Add the chocolate: Fold in the chopped white chocolate and nuts, if using.
  • Bake: Spread the batter evenly into the prepared pan. Bake for 25–30 minutes, until the edges are lightly golden and the center is just set. Avoid overbaking—the center should remain soft and chewy.
  • Cool: Allow the blondies to cool completely in the pan before cutting into 12 squares.
  • Decorate: Drizzle with melted white chocolate, then finish with a little yuzu zest and flaky sea salt.
