Description
At its most fundamental level, the zucchini pizza boats with high-protein ricotta recipe is a creative low-carb alternative to traditional pizza. - ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ½ cup pizza sauce or marinara
- 1 tsp olive oil
- 1 tsp Italian seasoning
- 1 garlic clove (minced)
- Salt and pepper to taste
Optional toppings:
- Cherry tomatoes

- Cooked chicken (for extra protein)
Instructions
- Preheat your oven to 200°C (400°F).
- Slice the zucchini in half lengthwise and scoop out the center to create “boats.”
- Brush lightly with olive oil and sprinkle with salt and pepper.
- In a bowl, mix ricotta, garlic, Italian seasoning, and a pinch of salt.
- Fill each zucchini boat with the ricotta mixture.
- Spoon pizza sauce on top, then sprinkle mozzarella and Parmesan cheese.
- Add any optional toppings you like.
- Bake for 15–20 minutes, until zucchini is tender and cheese is melted and golden.
