In the culinary world, this name describes a cooking technique where seafood or meat is gently simmered inside a thick, savory, tightly covered pot of spiced sauce. A classic crawfish étouffée centers around tender crawfish tails bathed in a roux-based gravy that is seasoned heavily with garlic, herbs, and the famous Louisiana holy trinity.

  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 1 medium yellow onion, finely diced
  • 1 green bell pepper, finely diced
  • 2 celery stalks, finely diced
  • 3 cloves garlic, minced
  • 2 cups seafood or chicken stock
  • 1 cup diced tomatoes, optional
  • 1 tablespoon tomato paste
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper, or to taste
  • 1 bay leaf
  • pounds (680 g) peeled crawfish tails
  • 2 tablespoons chopped fresh parsley
  • 2 green onions, sliced
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper, to taste
  • Cooked white rice, for serving

Instructions

  • Make the roux:
    Melt the butter in a large, heavy-bottomed skillet or Dutch oven over medium heat. Whisk in the flour and cook, stirring constantly, for 8–12 minutes, until the roux becomes a deep golden-brown color.
  • Add the vegetables:
    Stir in the onion, bell pepper, and celery. Cook for 5–7 minutes, until softened. Add the garlic and cook for another minute.
  • Build the sauce:
    Stir in the tomato paste, Cajun seasoning, paprika, thyme, cayenne, and black pepper. Gradually whisk in the stock to prevent lumps. Add the tomatoes and bay leaf.
  • Simmer:
    Bring the mixture to a gentle simmer. Reduce the heat and cook uncovered for 15–20 minutes, stirring occasionally, until the sauce thickens.
  • Add the crawfish:
    Stir in the crawfish tails and simmer gently for 5–7 minutes, just until heated through. Avoid overcooking, as crawfish can become tough.
  • Finish:
    Remove the bay leaf. Stir in the lemon juice, parsley, and green onions. Taste and adjust the salt and Cajun seasoning as needed.
  • Serve:
    Spoon the étouffée generously over hot cooked white rice. Garnish with extra green onions and parsley.

Notes

For the richest flavor, take your time with the roux—the darker it gets, the deeper and nuttier the flavor. Keep stirring constantly while browning it to prevent burning.
