Description

A beef tallow skillet chocolate chip cookie is a giant, deep-dish style cookie baked inside a seasoned cast-iron pan using rendered beef fat as the primary solid fat source instead of butter or vegetable shortening. Unlike individual cookies that spread out flat on a sheet pan, skillet cookies retain maximum moisture because the thick cast-iron walls contain the dough, allowing the center to stay incredibly fudgy and gooey while the bottom and sides develop a golden, crispy shell.

  • ½ cup (115 g) beef tallow, melted and slightly cooled
  • ¾ cup (150 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup (170 g) semi-sweet chocolate chips
  • 2 tbsp chopped chocolate, optional
  • Flaky sea salt, for topping

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a 10-inch cast-iron skillet with a little beef tallow.
  • Make the dough: In a large bowl, whisk together the melted beef tallow, brown sugar, and granulated sugar until smooth.
  • Add the egg and vanilla and whisk until well combined.
  • In a separate bowl, mix the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Avoid overmixing.
  • Fold in the chocolate chips and chopped chocolate.
  • Transfer to the skillet and spread the dough evenly, pressing it gently toward the edges.
  • Bake for 18–23 minutes, until the edges are golden brown and the center is still slightly soft.
  • Remove from the oven and immediately sprinkle with flaky sea salt.
  • Let cool for 10–15 minutes before serving. The center will continue to set as it cools.

Notes

Don’t overbake the cookie—the center should look slightly underdone when it comes out of the oven. This gives you that deliciously soft and gooey skillet-cookie texture.
