Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.
- Mix the dry ingredients: In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- Cream the butter and sugar: In a separate large bowl, beat the softened butter and sugar until light and fluffy, about 2–3 minutes.
- Add the wet ingredients: Beat in the eggs one at a time, followed by vanilla extract and blue food coloring.
- Combine: Add the dry ingredients in batches, alternating with the buttermilk. Mix gently until just combined. Stir in the vinegar.
- Fill the liners: Divide the batter evenly among the cupcake liners, filling each about ⅔ full.
- Bake: Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let the cupcakes cool in the pan for about 5 minutes, then transfer them to a wire rack and cool completely.
Cream Cheese Frosting
- Beat the cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar and beat until fluffy.
- Mix in the vanilla extract. Add a little heavy cream if the frosting is too thick.
- Pipe or spread the frosting over the completely cooled cupcakes.
Notes
For a vibrant blue color, use gel food coloring rather than liquid coloring. Avoid adding too much food coloring, as it can affect the flavor and texture of the cupcakes.
