Instructions
- Make the filling:
In a large bowl, mix the peanut butter, powdered sugar, crushed cornflakes, and vanilla until well combined. - Shape the balls:
Scoop out about 1 tablespoon of the mixture and roll it between your palms to form a ball. Place on a parchment-lined tray. - Chill:
Refrigerate the balls for 20–30 minutes to firm them up. - Melt the chocolate:
Melt the chocolate chips in the microwave in 20–30 second intervals, stirring after each interval. Add shortening or coconut oil if desired. - Dip:
Using a fork or dipping tool, coat each chilled ball completely in melted chocolate. Return them to the parchment-lined tray. - Set:
Refrigerate for 20–30 minutes, or until the chocolate is completely firm.
Notes
For an extra crunchy, Butterfinger-style texture, leave some of the cornflakes slightly chunky. You can also drizzle the finished balls with melted peanut butter or chocolate for an extra special touch!
