Instructions
- Prepare the crab: Gently pick through the crab meat to remove any shell pieces, being careful not to break up the crab too much.
- Make the mixture: In a large bowl, whisk together mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay, lemon juice, parsley, garlic powder, and black pepper.
- Add crab and crumbs: Gently fold in the crab meat and cracker crumbs until just combined. Avoid overmixing.
- Form the cakes: Divide the mixture into 8 portions and gently shape each into a thick crab cake.
- Chill: Place the crab cakes on a plate or baking sheet and refrigerate for 30 minutes. This helps them hold their shape while cooking.
- Pan-fry: Heat butter and olive oil in a large skillet over medium heat. Cook the crab cakes for about 3–4 minutes per side, or until golden brown and heated through.
