Description
At its core, a pomegranate guacamole recipe takes the iconic Mexican avocado mash and enhances it with fresh, seasonal fruit. Classic guacamole relies on a harmonious balance of creamy mashed avocado, tangy lime juice, spicy green chili, sharp red onion, savory salt, and fresh coriander. While this classic combination is already incredible, adding pomegranate seeds introduces a completely new dimension of taste and visual appeal.
Ingredients
-
2 ripe avocados
-
½ cup pomegranate seeds
-
¼ cup finely chopped red onion
-
2 tbsp fresh lime juice
-
2 tbsp chopped fresh coriander (cilantro)
-
1 small green chili, finely chopped (optional)
-
¼ tsp salt, or to taste
-
¼ tsp freshly ground black pepper
-
1 small tomato, deseeded and diced (optional)
Instructions
1. Mash the avocados
Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash with a fork until creamy but slightly chunky.
2. Add the seasonings
Stir in the lime juice, red onion, coriander, green chili, salt, and black pepper. Add diced tomato if desired.
3. Fold in the pomegranate
Gently mix in most of the pomegranate seeds, reserving a few for the topping. Avoid crushing them so they retain their juicy crunch.
4. Garnish and serve
Sprinkle the remaining pomegranate seeds on top. Taste and adjust the lime juice and salt. Serve immediately.
Notes
For the best flavor, use ripe avocados and add the pomegranate seeds just before serving. If preparing ahead, cover the guacamole tightly and refrigerate to help prevent browning.
