The Ultimate Snowy Winter Wonderland Cake Recipe for Holiday Celebrations

  • Author: David Andersson
  • Total Time: 1 hour 25 minutes (including cooling and decorating)
  • Yield: 12 servings 1x
  • Diet: Vegetarian

Description

At its core, a snowy winter wonderland cake is a multi-layered vanilla sponge cake decorated to mirror a freshly fallen blanket of winter snow. While some elaborate holiday cakes rely on heavy fondant or complex sugar sculpting techniques that require advanced pastry skills, this recipe achieves a breathtaking aesthetic using simple, delicious, and edible pantry ingredients.

Ingredients

Scale

For the cake

  • 2½ cups (310 g) all-purpose flour

  • 1½ cups (300 g) granulated sugar

  • 1 cup (225 g) unsalted butter, softened

  • 4 large eggs

  • 1 cup (240 ml) milk

  • 2 teaspoons baking powder

  • 2 teaspoons vanilla extract

  • ¼ teaspoon salt

For the frosting

  • 1 cup (225 g) unsalted butter, softened

  • 3 cups (360 g) powdered sugar

  • 2–3 tablespoons milk or heavy cream

  • 1 teaspoon vanilla extract

For the snowy decoration

  • 1 cup (80 g) desiccated coconut

  • White chocolate shavings, optional

  • Silver or white edible sprinkles, optional

  • Small edible snowflakes or sugar pearls, optional

Instructions

1. Prepare the oven and cake pans

Preheat the oven to 180°C (350°F). Grease and line two 8-inch round cake pans with baking parchment.

2. Mix the cake batter

In a bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

3. Add the dry ingredients

Gradually add the flour mixture to the butter mixture, alternating with the milk. Mix gently until just combined, taking care not to overmix.

4. Bake the cakes

Divide the batter evenly between the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

5. Make the frosting

Beat the softened butter until creamy. Gradually add the powdered sugar, followed by the vanilla extract and enough milk or cream to achieve a smooth, spreadable consistency.

6. Assemble the cake

Place one cooled cake layer on a serving plate. Spread a layer of frosting over the top, then place the second cake layer on top. Cover the top and sides of the cake with the remaining frosting.

7. Create the winter wonderland finish

Sprinkle desiccated coconut generously over the frosting to create a snowy effect. Decorate with white chocolate shavings, edible snowflakes, silver sprinkles, or sugar pearls for a magical winter look.

8. Chill and serve

Refrigerate the cake for 20–30 minutes to help the frosting set. Bring it to room temperature briefly before slicing and serving for the best texture and flavor.

Notes

Serve slices with hot chocolate, coffee, tea, or warm vanilla custard. This cake is ideal for Christmas dinner, winter birthdays, holiday dessert tables, and festive afternoon tea.
