Description

A traditional milk cake relies on a sponge cake base that is intentionally baked to be light and airy.   • 1 cup (200 g) brown sugar

  • 1 tsp baking soda
  • ½ tsp cream of tartar
  • ½ tsp salt
  • 1 tsp ground cinnamon

  • 1½ tsp ground cinnamon

Instructions

1. Brown the Butter

  • Melt the butter in a saucepan over medium heat.
  • Continue cooking, stirring frequently, until golden brown with a nutty aroma.
  • Remove from heat and let cool for 15–20 minutes.

2. Make the Dough

  • In a large bowl, whisk together the browned butter, brown sugar, and granulated sugar.
  • Add eggs and vanilla extract; mix until smooth.
  • In a separate bowl, combine flour, baking soda, cream of tartar, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

3. Chill

  • Cover and refrigerate the dough for at least 30 minutes.

4. Prepare the Coating

  • Mix the sugar and cinnamon in a small bowl.

5. Shape and Coat

  • Preheat oven to 350°F (175°C).
  • Line baking sheets with parchment paper.
  • Scoop about 2 tablespoons of dough per cookie and roll into balls.
  • Roll each ball in the cinnamon-sugar mixture.

6. Bake

  • Place cookies 2 inches apart on the prepared baking sheet.
  • Bake for 10–12 minutes, until the edges are set and the centers look slightly underbaked.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.
