Description

A South African chicken potjie is a slow cooked layered stew prepared inside a round, three legged cast iron cauldron known locally as a potjie. Pronounced as poy key, the word translates directly to small iron pot in Afrikaans. Unlike standard Western stews where cooks stir ingredients together continuously throughout the simmer, a genuine South African chicken potjie relies on a strict non stirring philosophy. Meat sears first at the bottom to establish a deeply caramelized flavor foundation, followed by liquid aromatics and carefully stacked tiers of fresh vegetables arranged according to their individual cooking times.

  • 2 lb (900 g) chicken thighs or drumsticks, bone-in
  • 2 tbsp vegetable oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tsp grated fresh ginger
  • 2 tsp paprika
  • 1 tsp ground coriander
  • 1 tsp dried thyme
  • ½ tsp ground black pepper
  • 1 tsp salt, or to taste
  • 2 cups chicken stock
  • 1 cup chopped tomatoes
  • 2 tbsp tomato paste
  • 3 medium potatoes, peeled and quartered
  • 3 carrots, cut into thick pieces
  • 2 bell peppers, sliced
  • 1 cup green beans
  • 1 cup sliced mushrooms
  • 1 cup corn kernels
  • 2 tbsp Worcestershire sauce
  • 1 tbsp chutney
  • ½ cup heavy cream or coconut milk, optional
  • Fresh parsley or coriander, for garnish

Instructions

  • Brown the chicken: Heat the oil in a heavy pot or Dutch oven over medium-high heat. Season the chicken with salt, pepper, paprika, and coriander. Brown the chicken on all sides, then remove and set aside.
  • Cook the aromatics: Add the onion to the same pot and cook for 3–4 minutes. Add the garlic and ginger and cook for another minute.
  • Build the sauce: Stir in the tomato paste, chopped tomatoes, chicken stock, Worcestershire sauce, chutney, and thyme.
  • Layer the vegetables: Return the chicken to the pot. Arrange the potatoes, carrots, bell peppers, green beans, mushrooms, and corn in layers on top. Don’t stir the layers—this is an important part of the traditional potjie technique.
  • Slow cook: Cover with a lid and reduce the heat to low. Simmer gently for 1½–2 hours, until the chicken is tender and the vegetables are cooked through. Avoid stirring; gently shake the pot occasionally if necessary.
  • Finish: Stir in the cream or coconut milk during the final 10 minutes, if using. Taste and adjust the seasoning.
  • Serve: Garnish with fresh parsley or coriander and serve hot with rice, pap, or crusty bread.

Notes

For a more traditional potjie experience, cook it outdoors over charcoal or wood and keep the heat low. The goal is slow cooking rather than boiling.
